This easy crock pot recipe is filled with flavor and perfect for busy weeknights. It makes great tacos or can be the filling for any Mexican dish!
I love crock pot recipes… but let’s be honest, what busy mom doesn’t? They cook themselves, take little supervision and minimal ingredients. What’s not to love? So when I need a quick and easy dinner recipe I pretty much always turn to my trusty slow cooker. Chicken Verde is one of those crock pot recipes that we always come back to time and time again, because it is easy, full of flavor and can be used in so many ways!
I really like to stretch my cooking to make my life easier on the next few meals. {like with this creamy taco chicken, or my favorite spinach artichoke dip} This chicken verde is perfect for that! The first day you have an easy dinner using your chicken verde meat with tortillas or taco shells, some cheese, lettuce and tomato – or serve over a bed of rice sprinkled with a little cheese- and you are golden. Then you can either continue using the left overs over the week for quesadillas, enchiladas, casseroles, salads and more! Or if your family gets tired and antsy quickly with food- just pop the left over meat in a few meal sized portions in Ziploc bags and throw them in the freezer. Then you can just thaw them and use for any of the above over the next few weeks when you need something quick and easy!
Like I mentioned before, I like to stretch and reuse recipes multiple times, so this makes a lot. If you want to feed a small family once, I would definitely recommend halving the recipe, although I will be sharing a few more recipes over the coming weeks you can use this chicken with!
All you will need for the recipe, as promised, is 3 ingredients! Chicken breast, a jar of tomatillo salsa, and a bit of chicken broth. Place the chicken in the crock pot, cover with the salsa and the broth and then cook on low for 6-8 hours. When it is done it should be so tender that you can just shred it up by stirring it with a fork or by using a pair of tongs.

3 Ingredient Crock Pot Chicken Verde
Ingredients
- 6-8 boneless skinless chicken breast
- 1 16 oz jar tomatillo salsa
- 1 cup chicken broth
Instructions
- Place the chicken in the crock pot and cover with the salsa and broth
- Cook on low for 6-8 hours.
- Shred with tongs or a fork and mix with any remaining liquid.
- Serve as tacos, quesadillas, burritos, salads etc.

Love this recipe – a different twist with the tomatillo salsa. I agree with a bit of chicken broth as well, because the breasts can get dried out. I even throw mine in frozen!
